Chicago is about to get fluffier. XO Marshmallow surpassed their $6,500 Kickstarter goal, they are second in less than six months, and will officially open the XO Marshmallow Cafe in Roger’s Park this summer.
XO Marshmallow was founded just over a year ago by lifestyle blogger Lindzi Shanks and marshmallowist Kathryn Connor. A mutual love for making s’mores led the duo to turn that ooey-gooey memory into a 21st century, gourmet, handmade treat with a modern twist. Each marshmallow is handcrafted with premium ingredients to ensure consistent quality.
The brand expanded at lightning speed, going from a local favorite to national phenomenon. After multiple requests for a standalone marshmallow store, Shanks and Connor took the plunge, began planning the XO Marshmallow Cafe and launched a Kickstarter to assist with the research and development.
“XO Marshmallow will be Chicago’s first and only marshmallow cafe and we are proud to announce we reached our crowdfunding goal and will be delivering on our promises. Our goal is to build a community that feels like a home away from home,” says Kathryn Connor and Lindzi Shanks, co-founders of XO Marshmallow. “Our offerings will be expanding from just marshmallows and mars’halos to s’mores, crispy treats, whoopie pies, toasted marshmallow lattes, to name a few. There will also be retail boxes available for purchase.”

marshmallows are the new cupcake.
