Celebrity Chef Luke Palladino is putting Salute Trattoria Italiana on the map in Sin City. With years of experience as an Italian chef throughout various regions of Italy to opening his own restaurant, Palladino has worked with some of the top chefs in the US and helped revamp the Italian dining experience.
Luke Palladino began his four year journey at the Culinary Institute of America where he resided in Italy and dedicated himself to becoming an expert in Italian cuisine. Upon his return to the United States, Palladino worked with some of the country’s most renowned chefs, including Emeril Lagasse and Todd English.
At Salute Trattoria Italiana at Red Rock Casino, Palladino serves as Executive Chef serving up his take on traditional dishes including, the iconic bistecca alla Fiorentina. The latest menu additions exhibit enticing new items such as Scialatielli (neapolitan pasta with shrimp garnished with bread crumbs) and Truffle Angolotti (white Truffle Ravioli topped with parmesan cheese). Found nestled in the open format kitchen of Salute cooking up all of his culinary classics to order, Chef Luke’s menu is nothing short of spectacular.
